In France this tower made of caramelized “choux à la crème” is the preferred dessert for memorable occasions such as weddings. The literal translation of croquembouche is “to crackle in the mouth”.

 

As you bite in, you will successively discover a brittle caramel, an exquisite soft puff and a smooth Tahitian vanilla pastry cream.

 

Our version is made the traditional way: completely freestanding and assembled using caramel only.
