Named after Honoratus, patron saint of bakers and pastry chefs, the Saint-Honoré cake is the French dessert by excellence.
A flaky puff pastry disc welcomes a luscious Tahitian vanilla pastry cream covered with a chantilly “tourbillon”, and surrounded by caramelized “choux à la crème”. The Saint-Honoré is creamy yet light, crunchy yet soft.
A wonderful balance of simplicity and sophistication.
