A traditional delicacy enjoyed as almond and orange trees begin to bloom, the Colomba — shaped like a graceful dove — symbolizes renewal and elegance. Studded with candied orange that hint at the harvest to come, its delicate glaze preserves the satisfying crunch of almonds.
